Ingredients:
6 large potatoes
6 tablespoons of butter
1/4 cup cheese
2 medium sized onions cut in long shreds
A few sprigs parsley finely chopped
Oil
Salt to taste
Black pepper powder
Wash the potatoes and prick them with a fork. Bake them in the oven for an hour.
In a pan add the oil and 2 tablespoons butter. Caramelise the onions. Add salt and pepper and allow it to cool. Add the grated cheese.
Cut the potatoes in halves and scoop out some potato. Soften the butter add salt, pepper and parsley and put some in each potato. Top it with the onion and cheese mixture and bake until the cheese melts and turns slightly brown.
Serve hot.

Lemon Fish
Ingredients:
Fish fillets
Juice of 4 lemons
2 tablespoons butter
Few sprigs parsley and mint finely chopped
A pinch sugar
Salt to taste
Black pepper powder
1 all purpose flour (maida)
Oil for frying
Marinate the fish with the juice of 2 lemons, salt and pepper.
In another pan melt the butter, add sugar, salt and pepper.
Sprinkle the flour on the fish fillets and shallow fry. Add to the sauce. Serve hot.
